Al Ward's low fat cornbread

Servings: 8

 

Ingredients:

- 2 cups of corn meal


- 4 0z of plain apple sauce or creamed corn


- 2 tablespoons of sugar or 2 packs splenda


- 1 egg - or  - 2 egg whites


- 1 1/4 cups of buttermilk or skim milk or soy milk


- 2 tablespoons of chopped pickled jalepeno (optional)

 

Instructions:

 

- Preheat oven to 400 degrees.

- Mix all ingredients thoroughly.

- Add more milk if not loose and creamy after thoroughly mixing.

- Cook until golden brown and firm. A toothpick inserted into the middle should emerge dry.

 

Cook’s Notes
I made this with soy milk rather than skim milk and it has a nice flavor.
