Al Ward's Goat Meat cooked in tomato sauce

 

Servings: 4/5

 

Ingredients:

-  2 cups water

-  1 stalk celery, chopped

-  1 medium onion chopped or diced

-  1/4 tsp salt (optional)

-  1/2 tsp ground black pepper

1 - 1 1/2 lbs. of diced goat meat

a couple dashes of olive oil

4 cloves of garlic or equivalent in minced garlic

1/2 chopped green bell pepper

1  8 oz. can stewed tomatoes

1  8 oz. can tomato sauce

1 small can tomato paste

2 table spoons of chopped or sliced ginger

1 cup of sliced mushrooms (optional)

 add cayenne to taste (optional)

 parsley flakes (optional)

-   curry powder (optional)

 

Instructions:

1. boil goat meat, salt, and celery for 1 hr.

2. sautee onion, garlic and peppers in olive oil in a pan.

3. add 8 oz. can of diced stewed tomatoes.

4. add 8 oz. can of tomato sauce.

5. add small amount of thyme, parsley flakes and curry powder.

6. add goat meat

7. simmer for one and one-half hours.

 

Cook’s Notes
I made this with soy milk rather than skim milk and it added a nice rich flavor.
