Banana
Pudding
with lower fats and sugars
Diabetics should check all labels of
ingredients for fats and sugars
Servings:
Provides 8 to 10
servings.
Ingredients:
- 5 medium sized ripened
bananas
- 50 or so vanilla
wafers (30 oz box…contains sugar…check the label)
- 1 table spoon of
melted fat
free margarine
- 2 small cups of sugar
free banana pudding (optional)
- 2 cups of skim milk
(skim milk does have sugar…check the label)
- 1 cup egg substitute,
i.e., egg beaters, or egg whites
- 1 box of powdered
sugar free banana pudding
Instructions:
- alternately layer the
bananas and vanilla wafers in a non metal baking dish, starting with vanilla wafers on
the bottom.
- Start pre-heating the
oven to 400 degrees.
- Thoroughly mix (do not beat) the following
ingredients:
- Splenda
- Margarine
- Milk
- Vanilla extract
- Salt
- Egg substitute
- 2 small cups of
pudding (optional)
- Powdered banana
pudding (box)
- slowly pour in the following ingredients over
low heat and boil for two minutes while constantly stirring.
- Now pour the the mixture
over the bananas and wafers, then bake at 400 degrees for 7 to 12 minutes (at
your discretion).
- Finally, remove the
banana pudding form the oven and let cool.
