This recipe is not one of my originals.  I found it someplace on the internet, I don't remember where.  I hope the author does not mind us borrowing it.

Shrimp Creole

Servings: 1/2

 

 

Ingredients:

 

  • 1/2 cup chopped green pepper

 

  • 1/4 cup chopped onion

 

  • 1 garlic clove, minced

 

  • 1 1/2 teaspoons vegetable oil

 

  • 15-ounce can tomato sauce

 

  • 1 teaspoon dried oregano

 

  • 1 bay leaf

 

  • 1/2 pound cooked medium shrimp, peeled and deveined

 

  • 1 celery rib, chopped

 

  • Hot, cooked rice

 


Instructions:

 

  1. In skillet, sauté green pepper, onion, celery and garlic in oil until tender.

 

  1. Add tomato sauce, oregano and bay leaf. Reduce heat to simmer, uncovered, for about 20

 

  1.  minutes.

 

  1. Stir in the shrimp; cook 3 minutes more to heat shrimp.

 

  1. Discard bay leaf. Serve over rice.
